Overnight oats make a great option if you and short on time in the mornings. Make your oats in a bowl to eat before your leave or in a jar to pop into your bag and take with you. 


1 cup of Greek or Coconut Yoghurt (or you can use a mixture of yoghurt and kefir)

2tbsp Gluten Free Whole Oats

1tbsp Ground Flaxseeds

1/2 cup of Frozen Raspberries

1 (heaped) tbsp of Unsweetened Desiccated Coconut 

1tbsp of Pumpkin Seeds 


1. Mix together the yoghurt, oats and flaxseeds and place in the bottom of a bowl/jar

2. Heap the raspberries on top of the yoghurt mixture

3. Sprinkle over the coconut and pumpkin seeds

4. Leave in the fridge overnight and serve in the morning
